The Founder's Story
Elena Petrova grew up not just in a house, but in a restaurant. Her grandmother, a legendary cook in their small town near St. Petersburg, ran a bustling "stolovaya" (canteen) that was the heart of the community. Elena spent her childhood surrounded by the comforting smells of simmering borscht, the rhythmic sound of dough being kneaded for pirozhki, and the boisterous laughter of satisfied patrons. Food was the language of love, celebration, and comfort in her family. When she moved to the UK for university, she deeply missed that connection to her roots. She searched for the authentic tastes of home but found only pale imitations. It was then that the seed for RusCuisine was planted. It began as a small project, cooking for friends who were captivated by the rich, complex flavors so new to their palates. Their enthusiastic response fueled a bigger dream: to build a bridge between her two homes, sharing the true, uncompromised soul of Russian food. RusCuisine is the culmination of that dream—a tribute to her grandmother's legacy and a gift to anyone yearning for a taste of genuine tradition.
Commitment to Provenance
Provenance—the story of where something comes from—is central to our identity. We believe you can taste the difference when an ingredient is grown with care and sourced with intention. This belief takes us on a journey across the British Isles to find the best possible partners. Our beets for borscht come from a family farm in the rich soils of Sussex, known for their deep color and sweetness. The salmon for our Kulebyaka is responsibly sourced from the cold, clear waters of the Scottish Highlands. Our free-range chickens are raised in Yorkshire pastures, and the heritage potatoes in our Olivier salad are grown in Pembrokeshire. We build personal relationships with our suppliers, visiting their farms and facilities to ensure their values align with ours. This is not the easiest or cheapest way to operate, but it is the only way to achieve the standard of quality we demand. This commitment means our food is not only more delicious but also supports local economies and promotes sustainable agriculture. It’s a holistic approach that honors both our Russian heritage and our British home.

Our Journey So Far
The Idea is Born
Founder Elena Petrova finalizes the business plan for RusCuisine, securing initial funding and beginning the search for a perfect kitchen location and a world-class executive chef.
Kitchen & Launch
Our central kitchen in London is fully equipped. After months of recipe testing and supplier sourcing, RusCuisine officially launches its delivery service to select postcodes.
Expansion & Recognition
We expand our delivery radius to cover all of Greater London. RusCuisine wins the "Best Authentic Cuisine" award from the Local Food Critic Association and delivers its 100,000th meal.
Sustainability & Community
We achieve our goal of 100% compostable packaging and launch our weekly subscription service and catering arm. The first online cooking masterclass is held, strengthening our community. Our cafe cooperates with the fomo7 platform to hold promotions among the guests.

Our kitchen is the engine room of RusCuisine, a space where tradition and modernity coexist in perfect harmony. It is a symphony of controlled chaos and intense focus. On one side, you'll see a chef meticulously hand-folding hundreds of pelmeni, a timeless and meditative task. On the other, another chef uses a precision immersion circulator to ensure a cut of beef is perfectly tender for our Stroganoff. The air is thick with the aromas of simmering stocks, caramelizing onions, and baking rye bread. We designed our kitchen with an open philosophy in mind—gleaming stainless steel surfaces, meticulously organized stations, and a rigorous cleaning schedule that is second to none. This is a place of respect: respect for the ingredients, respect for the craft, and respect for the colleagues who work alongside us. We believe a calm, professional, and happy environment translates directly into the quality of the food, and we invest heavily in our team's well-being and professional development. It is in this space that our promises of quality, authenticity, and passion are made real, every single day.
